Oatmeal Upma Ayurveda Recipe

Ingredients:

2 cups rolled oats (or 1 cup each of oats and spelt, kamut or other favorite rolled grain)

Handful of nuts such as cashews, almond slivers, sunflower seeds, pecans

1-2 tbs ghee
-
1 tsp fennel seeds
-
1 tsp cumin seeds
-
1 tsp cumin powder
-
Few pinches hing (asafetida)
-
½ tsp turmeric powder
-
1 tsp garam masala
-
5 curries leaves chopped finely
-
1-1.5 tsp salt to taste
-
1 small carrot (chopped into ¼” pieces)
-
1 small zucchini (sliced in half lengthwise and then sliced into bitesize pieces)

1 handful of cauliflower chopped into bite-sized flowerets
-
½ yam (peeled and then chopped into 1 “ cubes)
-
1 handful peas (approx. 1/3 cup)

6 cups water
-
Garnishes: Few handfuls fresh herbs of choice: chopped cilantro, parsley, basil, etc, 1 Tbs peeled chopped fresh ginger root for garnish, Squeeze of lime or lemon juice
Directions:

Dry roast ½ of your grains and all of your nuts together for 3-5 minutes

Melt ghee in pan on medium high

Add spices in order listed above and saute for 2 minutes until aromatic

Add all veges and salt and coat with ghee and spices
-
Cover and cook for two minutes

Add water, grains, nuts, and bring to a boil covered
-
Once boiled, stir, cover again, reduce heat and simmer for 8-10 minutes until grain and moistness is consistency you enjoy. Adjust accordingly by adding more water if you want, or by removing the lid and cooking out more of the water
