(AKA ~ Ayurveda Buttermilk Recipe, or Ayurveda Takra Recipe)
Why Takra:
Takra is Ayurveda's probiotic drink. It's very different from what we call buttermilk in most stores in the west. This recipe is often used to restore the beneficial bacteria and heal gut imbalances in ayurveda - a unique and difficult task. It is very good for assimilation and provides an excellent source of crucial digestive microbes to heal the gut and immune system. Drink with lunch daily.
* Can be made the night before if necessary to accommodate a busy schedule; however, whenever possible, it is most health promoting to make them fresh.
Ingredients for 1 serving:

1 Tbs- 1/4 cup fresh yogurt (make yourself whenever possible), or use Natren yogurt starter

3/4-1 cup cold water

1 pinch cumin powder (to help assimilation of nutrients and probiotics)

Optional: pinch of cardamom, fennel, sunthi powder (sunthi is a special ayurvedically processed ginger powder better for pittas/vatas)

1 pinch salt (Soma Salt is ideal)

You can add, one small handful chopped cilantro or a few mint leaves for enhanced flavor and digestability
Directions:

Using hand-immersion blender or regular blender, blend yogurt and water 2-3 minutes

Scrape away foam that rises to surface (that's the milk fat-aka butter)

Mix again and remove foam again

Repeat mixing as necessary to remove further fatty foam. Yogurt should appear watery and cloudy when done (not thick or solid white)

Add the spices above or any digestive spices you enjoy such as fennel, sunthi, black pepper, cardamom (1 pinch each) and stir by hand briefly just enough to mix the spices evenly.

Serve at room temperature.
