Chocolate Covered Strawberries Ayurveda Style

Savor the sweetness of the season!

Have you ever made your own chocolate covered strawberries?

It's so easy.

 

RECIPE:

  • 1 Tbs ghee or coconut oil to 16 oz of your favorite chocolate chips

  • melt your chocolate chips and oil of choice gently in a double boiler while stirring (double boiler is when you put the ingredients in a bowl that sits on top another pot that has water gently boiling in it. This way, the hot water from below gently warms the ingredients above without burning them

  • Dip the strawberries into the melted chocolate coating most of the berry - leaving the top portion to hold the berry

  • Set each coated berry one a time onto parchment paper to dry. 

  • Optional: Garnish with spices or choice or mix into the melted chocolate before dipping (ie cinnamon cardamom, ginger powder or raw chopped, or saffron threads, rose petal powder or pieces or lilacs (pictured here), or any edible flowers of choice) 

  • By the way, you can dip many favorite berries, nuts, fruits and food items into the chocolate to make them chocolate covered. I usually just stir in roasted nuts with the residual melted chocolate and then lay the nut clusters onto the parchment paper to dry. While they're drying you can add a pinch of salt and sprinkle with coconut flakes and spices like cinnamon, etc as desired.

  • No need to limit yourself to strawberries =)

  • I did nut clusters - pictured here by toasting a handful of my favorite nuts in the toaster oven until they smelled aromatic and were a little golden and then took them out and stirred them in the chocolate and then sprinkled a little salt and coconut flakes on them as they dried. This is my favorite way to eat chocolate covered nuts. Once you've had them - you'll never go back to store bought again. They are so perfectly roasted!

  • Chocolate covered anything is perfect for valentines day, spring, mother's day or anytime an easy and decadent dessert is called for.

  • Chocolate covered berries are best eaten the day you make them and if you refrigerate them they will collect water between the berry and the chocolate. Best to let them sit out overnight without refrigerating them if you need to make them the day before which is not preferrable. Chocolate covered nuts will last fresh and crispy for several weeks stored in an airtight container in the dark.
