∙ 1 fresh MATURE Coconut (with brown fiber intact) – shake to be sure contains a lot of water
∙ ½ tsp yogurt starter
Directions:
∙ Open fresh coconut and pour coconut water into a clean and dry mason jar using a strainer and a funnel
∙ Add spring water to a pot and prepare a water bath (AKA - double boiler or bain marie) to warm coconut water in by placing a pot of water on a burner and then adding mason jar with coconut water inside the “water bath” to gently warm the coconut water using the water bath
∙ Using a thermometer inside the mason jar which is in contact with the coconut water, gently heat the coconut water until the coconut water temperature reaches 98-102 degrees F – this is optimum temperature to add your probiotic yogurt starter to the coconut water
∙ Once 98-102 deg. F is reached, add yogurt starter
∙ Water will turn into a white foamy mixture
∙ Remove water bath from stove top
∙ Cover entire pot and mason jar with a towel and set them undisturbed in a warm place for 8-12 hours (overnight works well)
∙ A warm place such as your oven’s warmer drawer with drawer temperature turned to lowest temperature over night will be perfect. Be sure to place a cloth towel or oven mitten under the bain marie so that the bottom does not get overly warm
∙ In the morning, you can take 1 Tablespoon and then place in refrigerator ∙ Will last for 1 week. Do not keep past 1 week
∙ Take 1 Tbs each evening
∙ Coconut flesh can be used for various favorite recipes
