(Puffed Rice Snack)
Puffed Rice Chidwa is a popular snack which is light, spicy, easy to digest and so delicious. It's perfect for a a light meal or snack.
Ingredients (Makes about 12 cups)

1/4 cup ghee

1 cup whole pecans or walnuts, or combo or nuts of choice

1/4 cup maple syrup

2 Tbs chopped fresh ginger
-
20-40 fresh curry leaves chopped small (or omit if you don't have)

1/4 teaspoon red chili flakes
-
few pinches hing (asafetida) (optional)

1 teaspoon ground cumin
-
1 cup chopped cilantro leaves
-
1 teaspoon turmeric
-
1 teaspoon garam masala or Mum's masala super spice mix

1/2 cup dried raisins or craisins (dried cranberries)

2 teaspoons brown mustard seeds (can omit if liver is too hot)

11 cups puffed rice or other grain

1 teaspoon salt (or to taste)
Instructions:

Preheat the oven to 350°F.

Spread the nuts on a baking tray and bake until lightly toasted, about 5-10 minutes.

Remove from the oven and immediately drizzle with maple syrup and sprinkle with chili flakes; toss to coat.

Bake another few minutes until maple syrup thickens. Cool to room temperature.

In large wok or frying pan, melt ghee, add mustard seeds until they pop, add other spices (aside from fresh cilantro leaves) and fry for 1 minute until aromatic

Add puffed rice, raisings (or craisins) and stir constantly, fry until the rice is slightly crisp and coated with spices (approx 4 minutes)

Mix in the salt, cooled nuts, cilantro

Serve warm or cool - doesn't matter - everybody loves this!

Store in airtight container such as half gallon mason jar up to 2 weeks.
