This is an ayurveda foodie winter favorite. Simple, delicious, nutritious and transportable. Sesame brittle is for grounding vata, which means soothing a wandering spirit back into its body =). I love this as a snack or pre-breakfast blood sugar boost. Kids love it, everyone loves it. What's not to love?! Sesame is heavy, heating, grounding & builds strong bones, teeth, nerves and immunity. Contains minerals such as Calcium, Magnesium, Zinc and healthy fats to nourish the brain, nerves, hormones, support healthy cholesterol levels and reduce risk of heart disease. All that in a delicious treat. Just another reason to love ayurveda!
Sesame Brittle Recipe:

4 Ingredients:
-
1 cup sesame seeds
-
3/4 cup jaggery (if you don't have jaggery, substitute brown sugar or sucanat plus 2-4 Tbs water as needed to help sugar liquefy quicker, then simply cook a little longer to help liquid evaporate a bit)

1/8 tsp salt
-
1 Tbs ghee
-
Optional: 1/2 tsp cardamom powder, plus 1/2 tsp fennel seeds (optional)
Directions:-
toast sesame seeds in toaster oven until you can smell them

then pour them onto a plate to cool (alternately, dry roast in frying pan or oven)

while the sesame seeds are toasting, using a little ghee, grease a wooden cutting board, along with a rolling pint, whatever tool you're going to use to cut the brittle (ie, pizza cutter or knife), along with your stirring spatula

melt ghee in medium-sized cast-iron skillet or a non-stick skillet on medium low

add jaggery or sweetener of choice (along with water if using something other than jaggery) and begin stirring frequently with greased spatula until liquefied
-
once fully liquefied and bubbling add: salt, sesame seeds and spices
-
continue stirring until they are all gently combined
-
pour onto greased cutting board
-
roll into 1/4-1/2 inch thickness using greased rolling pin, shaping into an approximate square or rectangle
-
cut into diamond shapes or squares using your greased pizza cutter or knife
-
let cool until no more warmth is felt
-
remove using spatula and place into airtight container
-
keeps for 1 week unrefrigerated

enjoy a few pieces daily, either first thing in the morning or as a mid- or late-afternoon snack
