Kitchari - Barley-Quinoa-Rice-Mung 

Ingredients: 

1/3 cup each pearled barley, quinoa and white basmati rice ½ cup split mung dhal 

2 Tbs ghee 

1 Tbs cumin seeds 

½ tsp turmeric 

1 tsp garam masala (“mum’s super spice”) 

1 ½ tsp salt (or to taste) 

2 tsp coriander powder 

Optional: 1 cup chopped veges of choice 

Lime squeeze, fresh chopped cilantro for garnish 

Directions: 

Soak grains and dhal over night 

Strain and set aside 

In large sauce pan, add ghee and saute spices 

Add grains/dhal and salt and veges if desired 

Add water (8 cups – can add more water as you go if necessary) Bring to a boil and reduce to simmer, strain out foam that rises on top at  first 

Cook until soft (approx. 30-45 minutes)
