Ayurveda Amaranth Halava Recipe

(aka - Rajgira Halwa)

 

This incredible recipe will hit the spot in the winter, but can be used any time you're craving something sweet and in need of grounding and nurturance. Amaranth is high in earth element and will provide the extra grounding and nurturance you need in the winter months. 

Ingredients:

  • ¼ cup ghee

  • 1 cup amaranth flour

  • 1 ½ cup milk or boiled water

  • ½ cup jaggery or brown sugar or sucanat, or 1/3 cup honey

  • ½ tsp cardamom powder or 3-4 crushed cardamom pods crushed into powder

  • Small handful raisins

  • ¼ cup dry roasted almond slivers or cashew pieces for garnish

  • optional spices to your heart' content (few pinches of any will add deliciousness, warmth and digestibility to the dish): powders of cinnamon, clove, nutmeg, allspice, star anise (can throw in whole and then remove), chopped ginger

Directions:

  • warm milk or boil water in a separate pan (milk just warm, no need to boil)

  • in a separate frying pan, melt ghee in non-stick skillet on medium high

  • Add amaranth powder and saute in ghee approx. 4-5 minutes, until it starts having nutty aroma and turns slightly brown in color stirring continuously

  • Turn gas low if necessary to avoid burning

  • Once the flour is roasted, turn heat to medium high and slowly add the warm milk or boiled water and jaggery and raisins (if using honey, you will add it once you take it off the heat and it cools to moderately warm

  • add spices and stir to remove lumps, keep cooking and heating until smooth and thickens

  • Cook while stirring continuously till the mixture becomes thick and ghee starts to separate out from the sides.

  • Remove from heat

  • add cardamom powder and sliced almonds (or cashew pieces). Mix well.

  • Add honey if using honey and mix well

  • Serve warm - yummmmm

  • Tip: also goes good with warm milk the next morning for breakfast
