Ayurveda Probiotic Spinach Paneer Recipe (Ayurveda Saag Paneer Recipe)

Spinach paneer also known as saag paneer, is a creamy spinach with paneer cubes (homemade cheese) and probiotic benefits. It is an excellent vegetarian protein source and blood builder and is recommended on a weekly basis for vegetarians. This is a very popular dish with kids and served in every indian restaurant. The creamy texture of spinach with paneer is delicious. Plus, this version of the recipe provides you a healthy dose of probiotics for enhanced gut health and immune boosting!
Ingredients:

1 large container-16oz size of spinach (or 2 large bunches of spinach)

1 bunch greens of choice (collards, kale, chard, avoid spicy greens like mustard)

½ bunch of flat leafed Italian parsley
-
1 stick cinnamon
-
2 Tbs ghee
-
1 Tbs olive oil
-
1 Tbs cumin seeds
-
½ tsp turmeric powder
-
1 Tbs chopped fresh ginger
-
1 tsp salt
-
1/4 - 1/2 cup fresh made yogurt (or plain full fat yogurt from store)

1+ cup cubed fresh made paneer (or can purchase from store)
Directions:

chop greens to bite-sized pieces
-
cube paneer to bite-sized pieces

Sauté ghee in large frying pan or wok on medium heat

Once melted, add olive oil
-
Add all spices (except salt) in above order
-
Add all greens and cover with lid on medium low
-
Cook until greens reach their peak brightness
-
Turn heat to low
-
Remove cinnamon stick
-
Add salt
-
Blend greens with hand immersion blender in pan (no need to remove)
-
Add cubed paneer
-
Cover, cook on low 2 minutes
-
Uncover
-
Let cool few minutes
-
Stir in yogurt
